Vegan substitute for Grated Parmesan Cheese

Cook whole-grain pasta “al dente” (still a little firm in the middle).
Strain; do not rinse.
Toss pasta in a bowl with healthy vegetable oil blend (with balance of omega-3, -6, and -9 fats).
Add oat bran and wheat germ in equal amounts until pasta is well-coated.
Add a fat-free all-natural vinaigrette dressing.
Top pasta with superfood salad ingredients (optional).
Serve.

The oat bran and wheat germ provide texture, similar to grated cheese. The vinaigrette dressing adds sweetness and sharpness. And the oil improves the overall flavor and texture. The meal has plenty of protein, healthy fat, complex carbs, bioflavonoids, carotenoids, fiber, and other healthy dietary components. (I’m not a vegan, so sometimes I also add cooked chicken to the pasta.)

I keep a container of mixed salad vegetables (dry, no dressing) in the refrigerator to add to various meals. It’s from my list of superfood salad ingredients.

My healthy oil blend:
3.0 parts flax oil
1.0 part extra-virgin olive oil
1.5 parts expeller-pressed grapeseed oil or sunflower oil

This blend is 10% saturated fat, 30% omega-3, 30% omega-6, 30% omega-9 fats. Excess omega-6 and too little omega-3 is one of the problems with the Western pattern diet (typical unhealthy American diet). I use this oil almost exclusively.
